Seitan, often referred to as “mock beef” in vegetarian Chinese restaurants, is an excellent source of vegetable protein derived from wheat flour, and is available in many health food and grocery stores nationwide.
Hungarian Seitan Stew (Serves 12)
2 pounds seitan, drained and
sliced
2 carrots, peeled and diced
1 cup Vidalia onions, diced
1 tablespoon garlic, chopped
1 cup green bell pepper, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
2 teaspoons paprika
1 teaspoon ginger, minced
1 teaspoon chili powder
8 ounces Knudsen Very Veggie
Juice
1 cup vegetable stock
2 pounds potatoes, peeled and
diced
2 tablespoons fresh thyme,
picked and chopped
1 tablespoon corn starch
Directions:
In a hot stock pot, brown seitan, carrots, onion, garlic, and peppers. When browned, add remaining ingredients and cook for 45 minutes over low heat. Serve hot. Nutrition Information (per one-cup serving): 175 calories, 24g protein, 4g fiber, less than 1g fat, 173mg sodium.
