Two Superb Summer Recipes

Kick off the summer with a favorite recipe from last summer's Family Program and a new recipe from Pritikin's new Master Chef Consultant, Allen Susser, of Chef Allen's Restaurant.

Black Bean Chicken

“Never before was it so vital that we dramatically change the eating and exercising habits of our children. We don’t have a few overweight kids in America. We have a national health crisis,” states Jeffrey Novick, MS, RD, Director of Nutrition at the Pritikin Longevity Center®.

Among U.S. teenagers, obesity-related (type 2) diabetes has increased 800% during the past decade. And nearly 70% of teens in America show the initial stages of fatty streaks, or early heart disease, in their arteries.

A powerful solution, UCLA researchers have found, is the Pritikin Family Program, taught every summer at the Pritikin Longevity Center in Aventura, Florida.

In newly published research on overweight kids ages 8 to 17 attending the program, UCLA scientists found that in just two weeks, the children:

  • Lowered total cholesterol on average 23%.
  • Decreased LDL bad cholesterol 25%.
  • Shed 9 pounds.
  • Lowered triglyceride fats 39%.
  • Reduced key markers of inflammation, including C-reactive protein and oxidative stress, by 41% and 81%, respectively.
  • Increased the body’s production of nitric oxide, a very beneficial chemical that expands blood vessels, increases blood flow, and squelches plaque growth and blood clotting.

Each summer, the Pritikin Family Program is taught by the physicians, dietitians, and exercise physiologists at the Pritikin Longevity Center.  It’s total immersion in healthy living, “and it’s also a whole lot of fun,” smiles Director of Exercise Scott Danberg.

Each day, the kids romp their way through events like hands-on cooking classes featuring kid-friendly meals and snacks, music-blasting workouts in the gym, field trips to learn how to make healthy food choices, even at the mall, and volleyball at the beach.

“It’s a great summer vacation and one of the greatest gifts we could give our children – an education in how fun and doable healthy living is,” sums up Jeffrey Novick.

Learn To Cook & Dine Pritikin

This year, for the first time ever, the Pritikin Longevity Center & Spa is conducting special one-week programs focused on highly personalized hands-on cooking classes. “People will be amazed at how simple and delicious healthy cooking can be,” says Pritikin Executive Chef Anthony Stewart.

The one-week classes will take place between July 21 and August 3.

“Learn To Cook & Dine Pritikin” will be taught by award winning Pritikin chefs Drew Rosen and Anthony Stewart, and by Pritikin Master Chef Consultant Allen Sasser, who has received Top Table Awards from Gourmet Magazine.

The new cooking program will be woven into the Pritikin Longevity Center’s on-going program, which includes comprehensive cardiovascular and weight-loss medical care from Pritikin’s board-certified physicians, educational seminars in healthy nutritious living and disease prevention, and customized fitness classes.

The new cooking classes are very different from the traditional cooking program taught at Pritikin since 1975 because “these new classes are all ‘hands-on,’” explains Executive Chef Anthony Stewart, winner of Five Gold Medals in culinary competitions and educated at Cornell University. “The classes are so personalized that our guests will feel they are preparing meals at home. There’s no better way to learn how to cook.”

What’s particularly appealing about the new cooking classes, says Chef Anthony, “is that people will realize how simple preparing a healthy and tasty meal can be. Most people think cooking is a burdensome, time-consuming affair. Not so, I say! Our guests will leave our classes masters of easy-to-prepare, enjoyable, and creative meals.”

Highlights of “Learn To Cook & Dine Pritikin”:

  • Preparing soups, salads, dressings, vegetables, pastas, seafood, chicken, and desserts alongside Pritikin Chefs Anthony Stewart and Drew Rosen. “Our guests will learn first-hand the secrets and short cuts of professional chefs,” notes Chef Drew, recipient of the GQ Golden Spoon Award

  • Menu planning workshops.
