At the Spa Experience 2008 festival in Aspen, Colorado, on August 9 and 10, executive chef Anthony Stewart of the Pritikin Longevity Center & Spa in Miami, Florida, received the Platinum Carrot Award from the Aspen Center for Integral Health for his innovative and remarkable contributions to healthy, gourmet cuisine.
“It was a great opportunity to be among the best spas,” says Chef Anthony, whose own cooking demonstration at the event proved to the best of the best. His audience was awestruck. Smiles Anthony, “As I always say to people here at the Pritikin Longevity Center, healthy foods can and should be tasty, presentable, and indeed satisfying. I proved just that in Aspen.”
And Anthony continues to prove just that in the kitchens at the Pritikin Longevity Center & Spa, where his daily creations have shown guests that healthy eating really can be fabulous eating.
Currently, Anthony is putting the finishing touches on a brand new menu to be launched at Pritikin in October 2008. It includes Thai foods – “something new and exciting for us” – as well as weekly poolside BBQs featuring bison burgers and chicken burgers, savory new organic rice blends, and sumptuous desserts like new chocolate puddings and cheesecakes. “Healthy” never tasted so good!
The Spa Experience 2008 festival in Aspen featured Chef Anthony and four other internationally renowned chefs representing pre-eminent spas and resorts. Each chef contributed signature dishes. Anthony’s contributions included a delightful (see recipes below) Jamaican Seafood Curry on Whole Wheat Spaghetti as well as a Mustard-Coated Salmon with Corn Mashed Potatoes, Broccolini and Red Peppers.
The entire Spa Experience event was hosted by the Aspen Center for Integral Health, a nonprofit organization that sponsors researchers, conferences, and other educational forums throughout America on emerging topics on health, wellness, and prevention.
Chef Anthony Stewart has won accolades worldwide, including five gold medals in top culinary competitions, for his masterful use of foodstuffs like fresh seafood and tropical fruit from his native Jamaica. When not in the kitchen, he’s in the classroom, and has inspired thousands of Pritikin guests “to have some fun!”
