- 1 medium tomato, diced
- 1 ½ cups plain nonfat Greek yogurt
- 2 tablespoons fresh, finely chopped mint leaves
- ¼ cup finely chopped scallions or mild onion
- 1 small cucumber, peeled, seeded, and diced
- ½ tablespoon toasted* and ground cumin
- Pepper and Tabasco, to taste

- To toast cumin, place seeds over high heat in a small heavy skillet on the stove. Toss them frequently until fragrant, about two to four minutes.
