  • 4 pounds red beans
  • 3 yellow bells peppers, dice
  • 3 green bells peppers, dice
  • 3 red bells peppers, dice
  • 1 cup garlic, chopped
  • 1 cup shallots
  • 6 red onion
  • 1 bunch cilantro
  • 1 teaspoon liquid smoke
  • 1 tablespoon chili Powder
  • 3 gallons water
  • 2 quarts Knudsen low sodium V-8
  • 1 jar Enrico Salsa
  • 1 teaspoon garlic powder
  • 2 tablespoons oregano
  • ¼ cup balsamic vinegar

  • Soak beans overnight.
  • Cook vegetables in a large stockpot until soft.
  • Add beans, water, oregano, chili powder, liquid smoke, garlic powder, salsa, vinegar & juice.
  • Cook for 2 ½ hours.
  • When ready to serve add cilantro.
  • Serve immediately
