- 4 pounds red beans
- 3 yellow bells peppers, dice
- 3 green bells peppers, dice
- 3 red bells peppers, dice
- 1 cup garlic, chopped
- 1 cup shallots
- 6 red onion
- 1 bunch cilantro
- 1 teaspoon liquid smoke
- 1 tablespoon chili Powder
- 3 gallons water
- 2 quarts Knudsen low sodium V-8
- 1 jar Enrico Salsa
- 1 teaspoon garlic powder
- 2 tablespoons oregano
- ¼ cup balsamic vinegar

- Soak beans overnight.
- Cook vegetables in a large stockpot until soft.
- Add beans, water, oregano, chili powder, liquid smoke, garlic powder, salsa, vinegar & juice.
- Cook for 2 ½ hours.
- When ready to serve add cilantro.
- Serve immediately
