Balsamic Poached Salmon
The strong flavors of balsamic, garlic, and cilantro stand up well to salmon. Serve this dish hot for dinner, or, if you’re entertaining, as a superb cold appetizer sliced into bite-sized servings and curled in a lettuce leaf or atop whole-wheat, low-sodium crackers.

  1. In a small bowl, mix all ingredients together except salmon.
  2. Place salmon in baking dish, and pour marinade over salmon. Let marinate for 1 hour. Meanwhile, preheat oven to 350 degrees F.
  3. Bake salmon till just cooked through, about 8 to 15 minutes, depending on thickness.
  4. Serve cold or hot.
