These single-serving vegetable pizzas are a favorite lunch entree at the Pritikin Center.

  1. In a large bowl, combine all vegetables with garlic, oregano, and black pepper.
  2. Steam for 1 minute and let cool.
  3. Preheat oven to 450 degrees.
  4. On top of each pizza dough, spread 2 tablespoons of marinara sauce. Layer even amounts of vegetables on each dough.
  5. Sprinkle doughs with tofu parmesan and mozzarella.
  6. Bake at 450 degrees until crust is crunchy (about 8 minutes).
  7. Serve immediately.
