  1. Finely dice watermelon, pepper and cucumber.
  2. Chop and add mint, reserving a couple leaves for garnish.
  3. Squeeze in lemon juice and mix well.
  4. Grill salmon until cooked throughout (about 10 - 15 minutes)
  5. Let cool slightly and spoon salsa over fish.
