  1. In a large hot skillet brown eggplant. Add onion, garlic & peppers.
  2. Cook for 4 minutes over medium heat.
  3. Add remaining ingredients except couscous & cilantro.
  4. Cook over low heat for 1 hour.
  5. Add couscous & cilantro. Cook for 1 minute & serve.
