  1. Preheat your grill. Lay out 5 large pieces of aluminum foil and lightly spray with non-stick cooking spray. Pile on each foil in order: large stack raw baby kale, 1 piece of fish, lightly pepper, sprinkle on a bit of garlic, the lime zest, a small squeeze of lime juice and a sprinkling of cilantro.
  2. Repeat for all 5 foils.
  3. Wrap them up tight and place them on your grill.
  4. Grill approximately 15 minutes, or until the fish is firm, white and flaky. Serve over whole grain rice!
