  1. Preheat oven to 400 degrees.
  2. Wrap a scrubbed, rinsed and sliced sweet potato in aluminum foil and bake for about 1 1/2 to 2 hours, until soft.
  3. Allow potato to cool.
  4. Puree all ingredients together in a food processor.
  5. Add water if hummus is too thick.
  6. Serve with sliced vegetables.
