Instructions
  1. Toss tomatoes in dry basil, oregano, garlic and balsamic.
  2. Roast tomatoes for 30 minutes at 400F
  3. In a hot skillet brown onion & mushrooms.
  4. Cover & turn heat to low, cook for 5 minutes
  5. Add spinach & tomatoes. Cover for 2 minutes more.
  6. Serve immediately
