  1. In a large skillet or pot sauté garlic and onion until glossy, add tomatoes and sauté for additional 2 minutes (until soft)
  2. Add gingerroot, cumin and coriander stirring constantly for 1 minute
  3. Add all spices and curry powder and vegetable stock. Cook for 5 minutes over low heat.
  4. Add seafood and simmer for 10 minutes. If needed thicken with cornstarch dissolved in water
  5. Serve over whole wheat spaghetti
  6. Top with fresh cilantro and scallion
