Grilled Seiten Stir Fry over Soba Noodles

Materials

  • 2 cups seiten
  • 4 cups chinese broccoli cleaned & cut
  • 2 cups snow peas sliced
  • 2 red peppers sliced
  • 2 cups carrots julienne
  • 2 red onion julienne
  • 2 cups red cabbage julienne
  • 2 cups bok choy sliced
  • 1 cup nappa cabbage
  • 3 stick lemongrass
  • 1/2 cup garlic
  • 1/4 cup ginger
  • 2 tablespoons soy sauce, low sodium
  • 2 tablespoons water
  • 1/4 cup cilantro
  • 1/2 cup Pritikin plum sauce (see recipe below)
  • 3 tablespoon sesame seeds toasted
  • 3 pounds soba noodles

PLUM SAUCE

  • 3 pounds plums remove the pits
  • 2 tablespoons ginger peeled
  • 2 tablespoons garlic
  • 1 teaspoons soy sauce, low sodium
  • 1 pint water
  • 1 tablespoon onion chopped
  • 1 teaspoon paprika

Instructions

  • In Cuisenart puree lemongrass white (pounded), garlic, ginger, & soy sauce, water, soy sauce, & water.
  • In hot Skillet saute all vegetables very quickly add lemongrass mixture.
  • Finish with cilantro, sesame seed, plum sauce, and blanched soba noodles.
  • Serve immediately.

PLUM SAUCE

  • Boil for 20 minutes and puree
