Italian White Bean & Spinach Stew

Materials

  • 1/4 quart white wine
  • 1/2 qts red onion finely diced
  • 1/4 cup garlic chopped
  • 1/2 qts red bell pepper sliced
  • 15 tomatoes Roma (fresh & seeded) finely chopped
  • 1 quart white beans cooked
  • 1/4 cup balsamic vinegar
  • 1/4 cup soy sauce (lite)
  • 1/4 cup black pepper
  • 1/2 cup basil (fresh) chopped
  • 3 pounds spinach fresh picked & sliced

Instructions

  • Cook the onion, garlic and red pepper in white wine for about 10 minutes.
  • Add the tomato and white beans.
  • Mix well and cook for another 20 minutes, stirring occasionally.
  • Add spinach.
  • Serve hot
