Materials

SALAD INGREDIENTS

  • 3 heads Boston lettuce cleaned & chopped
  • 1 bunch basil picked & sliced
  • 1 bunch mint picked sliced
  • 1 bunch parley picked & chopped
  • 2 bunch arugula cleaned & sliced
  • 4 tomatoes diced
  • 2 cucumbers peeled & diced
  • 2 yellow peppers diced
  • 2 cups croutons (whole wheat)

LEMON VINAIGRETTE INGREDIENTS

  • 12 lemons juiced
  • 1 cup cider vinegar
  • 1 bunch parsley chopped
  • 4 cloves fresh garlic
  • 2 tablespoons oregano (dry)
  • 2 cups water
  • 2 tablespoons apple juice concentrate
  • 1.5 tablespoons Dijon mustard

Instructions

  • Mix all ingredients and divide equally among 12 plates serve with lemon vinaigrette
