Asian Tofu Stir Fry

Materials

  • 1 cup tofu diced
  • 2 tablespoons sesame oil
  • 1/2 cup asparagus sliced
  • 1/4 cup red pepper julienned
  • 1 red onion sliced
  • 1 tablespoon garlic chopped
  • 1 tablespoon ginger root chopped
  • 1 cup shiitake mushrooms sliced
  • 1/2 cup bean sprouts
  • 1 cup snow peas sliced
  • 3 tablespoons scallions snipped
  • 1 tablespoon low sodium soya sauce
  • 1/2 teaspoon basil

Instructions

  • Saute garlic, onion and gingerroot in sesame oil for 1 minute.
  • Marinate tofu in soya sauce.
  • Add asparagus, red pepper, onion, and shiitake mushrooms to sauté and cook for 2 minutes.
  • Finish off with bean sprouts, snow peas, scallion, and basil.
