In a small sauce pan, reduce orange juice concentrate and vanilla extract to half the amount you started with
In 4 parfait glasses pour equal amount of orange reduction
In each glass put one scoop of ice cream. Use a teaspoon to gently press down ice cream. The orange juice concentrate will float to the top. Garnish with orange segment and mint. Serve immediately
If using fat-free sour cream, whip reduction and vanilla with sour cream (reserving 1 tablespoon full for garnish)
Fill each glass with mixture, garnish with orange segment and mint, then drizzle remaining reduction on top
