Baked Apples With Cinnamon

Ah! What a wonderful way to celebrate autumn, or any time of year! For a creamy change of pace, sweeten some nonfat plain yogurt with Splenda and spoon over warm baked apple. You can also add to your creamy sauce a little orange juice or pureed berries.

Materials

  • 8 apples Rome, or any variety desired
  • 1 tablespoon vanilla extract
  • 1/4 cup apple juice concentrate
  • 1/2 teaspoon cinnamon ground
  • 8 sticks cinnamon if desired

Instructions

  • Preheat oven to 350 degrees F.
  • Wash apples and cut out cores with paring knife, but not all the way through. Leave bottoms of apples intact. Place apples on nonstick baking sheet.
  • In a small mixing bowl, combine vanilla, apple juice concentrate and ground cinnamon. Stir to combine.
  • Evenly dived the vanilla mixture between the apples, spooning into cavity. Insert 1 cinnamon stick into each apple.
  • Bake apples until tender, about 10 to 20 minutes.
