Baked Apples With Cinnamon
Ah! What a wonderful way to celebrate autumn, or any time of year! For a creamy change of pace, sweeten some nonfat plain yogurt with Splenda and spoon over warm baked apple. You can also add to your creamy sauce a little orange juice or pureed berries.

- 8 apples Rome, or any variety desired
- 1 tablespoon vanilla extract
- 1/4 cup apple juice concentrate
- 1/2 teaspoon cinnamon ground
- 8 sticks cinnamon if desired
Preheat oven to 350 degrees F.
Wash apples and cut out cores with paring knife, but not all the way through. Leave bottoms of apples intact. Place apples on nonstick baking sheet.
In a small mixing bowl, combine vanilla, apple juice concentrate and ground cinnamon. Stir to combine.
Evenly dived the vanilla mixture between the apples, spooning into cavity. Insert 1 cinnamon stick into each apple.
Bake apples until tender, about 10 to 20 minutes.
