Stuffed Cucumbers

Materials

  • 2 cup cucumber
  • 2 ounces yogurt, fat free - plain
  • 1 each fresh garlic chopped
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon paprika
  • 4 ounces cherry tomatoes diced
  • 1/4 teaspoon black pepper
  • 1 teaspoon fresh basil chopped

Instructions

  • Peel cucumber and cut into 2" pieces.
  • Scoop out center.
  • Mix Remaining ingredients and stuff into cucumber.
  • Garnish with dill sprig and serve immediately.
