- 2 cup cucumber
- 2 ounces yogurt, fat free - plain
- 1 each fresh garlic chopped
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon paprika
- 4 ounces cherry tomatoes diced
- 1/4 teaspoon black pepper
- 1 teaspoon fresh basil chopped
- Peel cucumber and cut into 2" pieces.
- Scoop out center.
- Mix Remaining ingredients and stuff into cucumber.
- Garnish with dill sprig and serve immediately.
