Mashed Boniato

Materials

  • 3 large boniato peeled & large dice
  • 1 taro root peeled & diced
  • 2 gallon water
  • 1 cup milk (fat free)
  • 1 small onion (red)
  • 1 teaspoon Dijon mustard
  • 1/2 cup sour cream, fat free
  • 1/4 teaspoon black peppercorns ground

Instructions

  • Boil taro and boniato in water until soft.
  • In a mixer, or by hand, mash rest of ingredients together.
  • Serve hot
