Yield: 12 people
- 3 large boniato peeled & large dice
- 1 taro root peeled & diced
- 2 gallon water
- 1 cup milk (fat free)
- 1 small onion (red)
- 1 teaspoon Dijon mustard
- 1/2 cup sour cream, fat free
- 1/4 teaspoon black peppercorns ground
- Boil taro and boniato in water until soft.
- In a mixer, or by hand, mash rest of ingredients together.
- Serve hot
