Plantain Soup

Materials

  • 1 plantain (ripe) peeled & chopped
  • 1 onion diced
  • 1 carrot peeled & diced
  • 1 leek white only chopped
  • 1 tablespoon garlic chopped
  • 2 quart water
  • 1 pinch allspice ground
  • 3 tablespoon sour cream, fat free
  • 1 teaspoon cinnamon
  • 2 teaspoon ginger chopped

Instructions

  • Sauté all vegetables until light brown.
  • Add rest of ingredients except sour cream and cook until soft.
  • Blend and add sour cream.
  • Serve hot
