Grilled Salmon with Watermelon and Fresh Mint Salsa

Materials

  • 1/8th watermelon seedless
  • 1/2 yellow pepper
  • 1/2 cucumber
  • 1/2 lemon freshly squeezed
  • 6-8 fresh mint leaves
  • 4 salmon steaks

Instructions

  • Finely dice watermelon, pepper and cucumber.
  • Chop and add mint, reserving a couple leaves for garnish.
  • Squeeze in lemon juice and mix well.
  • Grill salmon until cooked throughout (about 10 - 15 minutes)
  • Let cool slightly and spoon salsa over fish.
