Grilled Salmon with Watermelon and Fresh Mint Salsa
Yield: 4 people
- 1/8th watermelon seedless
- 1/2 yellow pepper
- 1/2 cucumber
- 1/2 lemon freshly squeezed
- 6-8 fresh mint leaves
- 4 salmon steaks
- Finely dice watermelon, pepper and cucumber.
- Chop and add mint, reserving a couple leaves for garnish.
- Squeeze in lemon juice and mix well.
- Grill salmon until cooked throughout (about 10 - 15 minutes)
- Let cool slightly and spoon salsa over fish.
