Spicy Pickled Vegetables

Materials

  • 3 bell pepper julienne
  • 2 carrot julienne
  • 1 red onion julienne
  • 1 teaspoon garlic minced
  • 1 teaspoon red pepper crushed
  • 1 teaspoon oregano dried
  • 1 tablespoon red wine vinegar
  • 2 teaspoons apple juice concentrate
  • 1 tablespoon Pritikin® All-Purpose Seasoning*

Instructions

  • In a hot pan, brown vegetables then add garlic halfway thru.
  • Deglaze with liquids and add seasoning.
  • Let reduce for 2 minutes. Serve on top of seared fish.
