Spicy Pickled Vegetables
- 3 bell pepper julienne
- 2 carrot julienne
- 1 red onion julienne
- 1 teaspoon garlic minced
- 1 teaspoon red pepper crushed
- 1 teaspoon oregano dried
- 1 tablespoon red wine vinegar
- 2 teaspoons apple juice concentrate
- 1 tablespoon Pritikin® All-Purpose Seasoning*
- In a hot pan, brown vegetables then add garlic halfway thru.
- Deglaze with liquids and add seasoning.
- Let reduce for 2 minutes. Serve on top of seared fish.
