Vegetable Loaf

Materials

  • 2 cups carrots shredded
  • 2 cups green peas
  • 2 cups frozen corn niblets
  • 2 cups asparagus chopped
  • 2 cups onion minced
  • 2 cups green beans chopped
  • 1 cup shallots minced
  • 1 cup mushrooms diced
  • 3 cup bread crumbs (whole-wheat)
  • 6 eggs whites
  • vegetable oil spray
  • 1 teaspoon oregano , dry
  • 1 teaspoon basil (dry)
  • 1 tablespoon All Purpose Seasoning

Instructions

  • Preheat oven to 375°.
  • Combine vegetables, bread crumbs, egg whites.
  • Spray baking dish with cooking spray and press loaf mixture into it.
  • Bake for 30-45 minutes or until golden brown.
