1/4cup100% frozen apple juice concentratethawed, undiluted
2tablespoonsDijon mustard, no-salt-added
1/4cupvegetable stock (low-sodium)
1zucchinisliced into thin strips
1red bell peppersliced into thin strips
1Vidalia onionsliced into thin strips
1headbroccolistems and florets chopped
1/2poundbutton mushroomswiped clean, sliced in half
1/4bunchcilantroleaves chopped
2tablespoonscornstarch
2tablespoonswater
Instructions
In a wok or nonstick skillet, sauté garlic and ginger until glossy.
Add apple juice, mustard, and half of vegetable stock, stirring to combine.
Add remaining ingredients (except cornstarch and water). Sauté for 5 minutes.
Whisk cornstarch in water, and add to thicken stir fry.
