Butterscotch Pudding
Butterscotch Pudding is a delicious treat, but one usually full of unhealthy ingredients. Indulge your sweet tooth with this fan favorite, and without the guilt.
Yield: 5 people
- 1 medium sweet potatoes
- 1/4 cup reduced fat cream cheese fat-free is preferred
- 1/4 cup maple syrup
- 3/4 cup Greek yogurt (fat-free plain)
- 1/4 teaspoons vanilla extract
- 1/2 medium lemon juiced
Wash and wrap potatoes with foil while still wet
Roast at 400F for at least one hour or until potatoes begin to caramelize
Cool potatoes completely and peel skin
Combine all ingredients in blender and puree until smooth
Allow a few hours in the refrigerator to thicken more
