Butterscotch Pudding

Butterscotch Pudding is a delicious treat, but one usually full of unhealthy ingredients. Indulge your sweet tooth with this fan favorite, and without the guilt.

  • 1 medium sweet potatoes
  • 1/4 cup reduced fat cream cheese fat-free is preferred
  • 1/4 cup maple syrup
  • 3/4 cup Greek yogurt (fat-free plain)
  • 1/4 teaspoons vanilla extract
  • 1/2 medium lemon juiced


  • Wash and wrap potatoes with foil while still wet
  • Roast at 400F for at least one hour or until potatoes begin to caramelize
  • Cool potatoes completely and peel skin
  • Combine all ingredients in blender and puree until smooth
  • Allow a few hours in the refrigerator to thicken more
