Red Bean Soup

Materials

  • 1 bag red beans
  • 1 yellow bell pepper diced
  • 1 green bell pepper diced
  • 1 red bell pepper diced
  • 2 tablespoons garlic chopped
  • 2 tablespoons shallots
  • 1.5 red onion peeled and diced
  • 1 tablespoon cilantro
  • 1/4 teaspoon liquid smoke
  • 1 teaspoon chili powder
  • 1 gallon water
  • 1 quart Knudesen V8 (Low Sodium)
  • 2 tablespoon Enrico's Salsa (No Salt Added)
  • 1 teaspoon garlic powder
  • 2 teaspoon oregano
  • 1 tablespoon balsamic vinegar

Instructions

  • Soak beans overnight. Cook vegetables in a large stockpot until soft. Add beans, water, oregano, chili powder, liquid smoke, garlic powder, salsa, vinegar, and juice. Cook for 2 ½ hours. When ready to serve add cilantro.
