Tomato Onion Soup

Materials

  • 3 cups vidalia onions sliced
  • 1 teaspoon garlic minced
  • 1 teaspoon apple juice concentrate
  • 1 teaspoon basil chopped
  • 1 teaspoon dill chopped
  • 32 ounces veggie juice such as Very Veggie Juice
  • 10 ounce vegetable stock
  • vegetable oil spray (fat free)

Instructions

  • Lightly mist soup pot with vegetable spray. Heat to medium. Saute onion until translucent. Add apple juice to caramelize onion
  • Add garlic, vegetable stock, and Very Veggie juice. Lower temperature and simmer for 15 minutes
  • Add fresh herbs and serve
