Lentil & Pineapple Salad

Materials

Salad

  • 3 cups lentil cooked and drained
  • 1 cup pineapple finely diced
  • 1/4 cup red pepper finely diced
  • 1/4 cup basil chiffonade OR mint

Salad Dressing

  • 1/4 cup white vinegar balsamic
  • 1 tablespoon garlic chopped
  • 2 tablepoons onion chopped OR chopped shallot
  • 3 tablespoon apple juice concentrate
  • 1/4 teaspoon xanthan gum

Instructions

Salad

  • In a bowl combine all ingredients and toss well.

Salad Dressing

  • Combine all ingredients in a blender and blend for one minute
  • Pour over salad and mix well
  • Chill and serve
