Salad

lentil
cooked and drained

pineapple
finely diced

red pepper
finely diced

basil
chiffonade OR mint
Salad Dressing
1/4
cup
white vinegar balsamic

tablespoon
garlic
chopped

tablepoons
onion
chopped OR chopped shallot

tablespoon
apple juice concentrate
1/4
teaspoon
xanthan gum
Instructions
Salad
In a bowl combine all ingredients and toss well.
Salad Dressing
Combine all ingredients in a blender and blend for one minute
Pour over salad and mix well
Chill and serve
