Bring milk to a light simmer
Add Swerve, vanilla, cinnamon, and nutmeg
In a separate bowl, add egg yolks
Very slowly, begin adding warm milk into egg yolks, whisking constantly
Add at least half the pot of milk into the eggs, bringing up the temperature slowly (tempering)
Now add warm egg/milk mixture slowly back into pot
Do not bring to a boil or you may curdle the egg
Allow to heat slightly to thicken
Cool and serve for the next week
