Orange Ginger Glazed Scallops

For the Scallops: 1 lb sea scallops about 12 large scallops ½ tsp Pritikin all-purpose seasoning ½ tsp salt-free lemon pepper For the Orange Ginger Glaze: ½ cup fresh orange juice 1 tsp orange zest 2 tsp ginger minced 2 tsp garlic minced ¼ cup 100% pure apple juice 2 TB apple cider vinegar ¼ cup chicken broth pinch of crushed red pepper flakes
In a small preheated saucepan, spray with oil then sauté ginger and garlic until lightly brown
Add orange juice, zest, apple juice concentrate, vinegar, and broth
Bring to a boil, then reduce to a simmer over medium heat for 10–12 minutes, stirring occasionally
Reduce until the glaze thickens slightly to a more syrupy consistency
Pat scallops dry and season both sides with the all-purpose seasoning and lemon pepper
Heat a skillet over medium-high heat and lightly coat with oil
Sear scallops for 2–3 minutes on each side until golden brown and just opaque in the center
Glaze & Serve
