Spooky Pritikin Cookies

These Halloween cookies are pretty amazing because they have absolutely no butter or margarine, but lots of wonderful cookie-style chewiness. Sure, they’re not Oreos, but pop one in your mouth when you’re craving a cookie (or a Snickers Bar Halloween night), and they just might do the trick!

Ingredients
  

  • 4 cups oatmeal uncooked
  • 1/2 cup raisins
  • 2 tablespoons Splenda
  • cinnamon to taste (about 1/2 to 1 teaspoon)
  • 4 egg whites whipped to medium peaks w/ whisk or electric mixer
  • 1/2 cup apple sauce (no-sugar-added varietie)
  • 1/2 teaspoon vanilla extract
  • 30 small Halloween party favors

Instructions
 

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, combine oatmeal, raisins, Splenda, and cinnamon.
  • In a small mixing bowl, combine whipped egg whites, applesauce, and vanilla.
  • Add egg white mixture to oatmeal mixture, and mix all ingredients together till uniformly moist.
  • Scoop up dough, one heaping tablespoon at a time, and gently press into a ball with your hands. Place each cookie ball onto a nonstick cookie sheet.
  • Bake for 15 minutes.
  • Cool. Insert a small Halloween party favor into each cookie, and enjoy.
