Grilled Bison Filet Mignon with Au Jus

6 ea Bison filet steaks (4½ oz) 1 tsp Black pepper 1 tsp All Purpose Seasoning 6 oz Bison Sauce served on side Bison Au Jus Sauce ½ lb Bison tenderloin trimmings 2 cups Yellow onion diced 1 cup Bell Peppers diced 1 cup Carrots diced 1 cup Celery diced 2 TB Minced Garlic 2 TB Thyme fresh 4 Bay Leaf dried 2 qt Chicken Broth low sodium ½ cup Salsa low sodium ½ cup Tomato Puree 1 tsp Oregano dry 1 tsp Basil dry Corn Starch mix with water
Preheat grill for 20 minutes
Season raw bison steaks
Grill on each side for roughly 3-4 minutes, until desired doneness is achieved
Saute meat and vegetables until golden brown
Add tomato puree and allow to slightly caramelize
Deglaze the pan with broth and let reduce by half
Add all seasonings
Bring to a boil, then turn to a simmer
Cook uncovered for 1-2 hours
Add cornstarch slurry at the end until desired thickness is achieved
