Grilled Florida Lobster Tail with Truffle Chili Glaze

Ingredients
  

Lobster Tails

  • 4 ea 5 oz Lobster tail Split open with poultry shears
  • 1 tsp Lemon Pepper salt free
  • 1 tsp All Purpose Seasoning

Truffle Chili Lobster Glaze Servings: 6 

  • 4 TB raisin
  • 4 TB water
  • 2 tsp red chili flakes
  • 1 TB olive oil
  • 2 TB truffle oil

Instructions
 

Lobster Tails

  • Preheat griddle or grill for 15-20 minutes
  • Season the butterflied lobster meat
  • Grill tails for 6-8 min, or until cooked through

Truffle Chili Lobster Glaze

  • In a small saucepan over low heat, golden raisins, chili flakes and water and simmer for 20 min until raisins are plump. Remove from heat and puree smooth 
  • Strain raisin mixture and set aside 
  • In a blender add raisin mix, olive oil, truffle oil  
  • Brush generously over cooked lobster tails right before serving or baste during the last 1–2 minutes of broiling/grilling 

Notes

If you want a deeper chili kick, you can let the flakes steep in the raisin mix for 10–15 minutes before serving.
