Instructions
  1. Saute onion and garlic, allow to cool.
  2. Mix all ingredients, except eggplant, in a cuisenart.
  3. Bake eggplant in a 450-degree oven for 4 minutes. Let cool.
  4. Lay eggplant flat and place mixture into the front end. Roll eggplant.
  5. Place in a baking dish and cover with tomato sauce. Cover and cook for 25 minutes at 350 degrees.
