Healthy Spinach and Ricotta Crepe Recipe

Materials

Whole Wheat Crepes

  • 1 cup white whole wheat flour
  • 1 cup skim milk
  • 1/4 cup egg beaters
  • 1 tb dry parsley

Cream Spinach Filling

  • 2 cup frozen spinach thawed and drained
  • 2 cup yellow onions diced fine
  • 1 pz carrots diced fine
  • 1 pz red bell pepper diced fine
  • 1 tb garlic minced
  • 1 1/2 cup part skim ricotta
  • 1 tsp dry oregano
  • 1 tsp dry basil
  • 1/2 tsp crushed red pepper
  • 1 tsp Mrs Dash ground

Instructions

Whole Wheat Crepes

  • Combine all ingredients and mix thoroughly
  • Measure ¼ cup batter per crepe and pour into heated 8” non-stick pan, tilting to cover the inner surface of the pan
  • Cook on both sides until golden brown; set aside

Cream Spinach Filling

  • In a medium hot pan, sauté all vegetables until caramelized then add minced garlic and allow to lightly brown
  • Add spinach and seasonings and allow to heat up completely, ensuring most moisture is purged from spinach
  • Cool down and mix with ricotta
  • Scoop cream spinach into crepes, roll and serve with tomato sauce
