Ingredients
  

Crunchy Thai Chickpea Salad

  • 12 cup romaine lettuce
  • 2 cup crispy cooked chickpeas
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1 cup thinly sliced red bell peppers
  • 1 cup cucumber, thinly sliced
  • 1 cup finely chopped cashews, unsalted garnish
  • 1 cup curry tahini dressing
  • chopped fresh cilantro garnish
  • lime, cut into wedges garnish

Curry Tahini Dressing

  • 1/2 cup tahini
  • 3 tb lemon juice
  • 1 cup 100% pure apple juice
  • 1 tsp curry powder
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp turmeric powder
  • 1/2 tsp paprika
  • 1 tsp garlic minced, fine
  • 1 tb water – adjust for desired consistency

Instructions
 

Crunchy Thai Chickpea Salad

  • Mix all vegetables together
  • Layer on top of romaine lettuce
  • Sprinkle a generous amount of chick peas
  • Garnish the top with a small amount of chopped cashews
  • Sprinkle cilantro and use lime wedge to garnish

Curry Tahini Dressing

  • If your tahini has separated, stir it well until it's smooth and homogeneous
  • In a blender, combine all ingredients and mix well
