Carrot & Beet Salad
Yield: 4 people
Materials
- 3 large carrot peeled & diced
- 2 large beet peeled & diced
- 4 tablespoon cilantro chopped
- 2 lemon juiced
- 1/4 teaspoon cumin ground
- 1 tablespoon white vinegar
- pinch black peppercorns ground
- 1 tablespoon mint picked & chopped
Instructions
- Steam carrots & beets separately until just soft.
- In a hot skillet sauté carrots, beets, cumin & black pepper.
- Add remaining ingredients and cook until hot.
- Serve immediately.
