Did you know that a serving of many salad dressings has more calories than a cheeseburger? Here's a great alternative, Champagne Vinaigrette. It sings with flavor (and will have you singing when you get on the bathroom scale). It has only 10 calories per 2-tablespoon serving.
Yield: 3 cups
- 1 cup champagne vinegar
- 1/8 teaspoon xantham or guar gum blend, using a blender, with 1 cup water.
- 2 tablespoons Dijon mustard, no-salt-added
- 1 shallot minced
- 1 garlic minced
- 1/4 cup chives minced
- 1 cucumber peeled, seeded, and minced
- 1 red bell pepper minced
- In a large bowl, mix all ingredients with a whisk until well combined.
