Citrus Fennel Mango Salad

This salad is proof positive that healthy food can be as enticing to the palate as expensive red wine! You’ll love this recipe’s complex blend of citrus, licorice-flavored fennel, tropical mango, red onion, and snappy stone ground mustard.

Materials

  • 1 grapefruit (supreme)
  • 2 oranges (supreme)
  • 1 bulbs fennel julienne
  • 3 mangoes peeled & julienne
  • 1 red onion julienne
  • 1 red pepper julienne
  • 1 green pepper julienne
  • 1 carrot julienne
  • 1 teaspoon jicama sliced
  • 1 pound mixed greens

Citrus Herb Dressing

  • 1 tablespoon mustard (low sodium stone ground)
  • 1/4 cup rice wine vinegar
  • 2 tablespoons apple juice concentrate

Instructions

  • Convine all vegetables in a bowl
  • Add Citrus Herb Dressing to vegetables and let marinate for 5 minutes
  • Serve on a bed of mixed greens
