Cucumber Salad With Chives & Dill

  • 1 cucumber peeled and very thinly sliced
  • 1 tablespoon chives (fresh) chopped
  • 1 tablespoon dill (fresh) chopped
  • 1/4 cup sour cream (nonfat)
  • 1/2 tablespoon rice vinegar (unseasoned)
  • 1/2 lemon juiced
  • pinch black pepper to taste
  • pinch paprika
  • small pinch cayenne pepper


  • After slicing cucumber, let slices drain for about 5 minutes.
  • Combine remaining ingredients and mix with cucumber slices.
  • Chill and serve.
