  1. Cut escolar into 4 oz portions.
  2. Mix all spices together.
  3. Season fish and grill or sear in Vital Nutrition skillet until medium.
  4. The fish will continue to cook until well done when off the heat.
  5. Serve immediately.
  6. SAUCE
  7. Bring all the ingredients to a boil reduce heat to simmer.
  8. Reduce liquid until it coats back of a spoon.
