Jamaican Red Bean Soup Recipe

Jamaican Red Beans

Materials

  • 2 cups red beans (dry) soaked overnight
  • 1 gallon water
  • 2 tablespoon thyme leaves
  • 1/2 cup vidalia onions raw-chopped
  • 1/2 cup garlic minced
  • 2 bay leaves
  • 1 teaspoon oregano , dry
  • 1 whole chilpotle pepper
  • 1 boniato peeled & diced
  • 1 plantain peeled & diced
  • 1 taro peeled & diced
  • 2 cups calabaza peeled & diced
  • 1 tablespoon soy sauce, low sodium

Instructions

  • Boil beans with thyme, onions, garlic, bay leaves, oregano, & chilpolte until beans are almost soft.
  • Add remaining ingredients
