Meatless Meatballs with Fresh Tomato Sauce

Materials

MEATLESS MEATBALLS

  • 1 pound meat substitute
  • 1 cup bread crumbs (whole-wheat)
  • 1/2 teaspoon black pepper ground
  • 2 teaspoons oregano (dry)
  • 2 teaspoons fresh basil leaves chiffonaide (cut into thin strips or shreds)
  • 1/2 onion minced
  • 1/2 cup egg beaters

FRESH TOMATO SAUCE (serving size: About 1 cup)

  • 8 large tomatoes
  • 1/4 cup onion diced
  • 1/4 cup garlic chopped
  • 1/2 teaspoon oregano (dry)
  • 1/4 teaspoon black peppercorns ground
  • 1/2 teaspoon basil (dry)
  • 1 teaspoon Splenda
  • 1/4 bunch fresh basil leaves chiffonaide

Instructions

MEATLESS MEATBALLS

  • Mix all ingredients together.
  • Mold into balls.
  • Bake at 350 degrees for 25 minutes.

FRESH TOMATO SAUCE

  • Cut, grate, or puree tomatoes, as desired.
  • Brown onions and garlic.
  • Add tomatoes, oregano, and pepper.
  • Cook over medium heat until thickened, about 40 minutes.
  • Finish with Splenda and fresh basil.
